This fresh and zesty goats milk cheese is from the province of Berry which has long been the source of famous cheeses. This one came in a small pyramid shape; the cured whey is drained and cast in a mould. It is, then is removed, covered with salted charcoal ashes, and ripened in a well-ventilated room at 80% humidity.
Lisa at Wedge+Fig pointed out that it has a great summer taste of fresh lemony zest and I totally agree. This chevre comes in a truncated pyramid that I decided to cut up so you can see the center. It loses the shape, but it was nice and fluffy to paint.. Nonetheless, it makes for the most refreshing addition to a cheese board in warm weather!
